Roasted Pumpkin Quinoa Salad: Nutrisystem

Delicious and healthy pumpkin quinoa salad with feta cheese recipe from Nutrisystem

Ingredients
  

  • 2 cups pumpkin cubed
  • ¾ cup quinoa
  • 1 Tbsp. olive oil
  • 2 Tbsp. lemon juice
  • 1 tsp. cumin
  • ½ cup crumbled feta cheese low fat
  • 2 tsp. parsley chopped

Instructions
 

  • Coat pumpkin in olive oil and cumin
  • Bake at 350 F for 25 minutes
  • Place quinoa and 1 ½ cups cold water over high heat and bring to boil
  • Reduce heat and simmer for 12 minutes or until liquid is absorbed
  • Mix together roasted pumpkin and quinoa with all remaining ingredients
  • Season with salt and pepper to taste
