Asian Chicken Lettuce Wraps (Weight Watchers)

WW (Weight Watchers) Asian chicken lettuce wraps recipe. Only 2 WW Smart Points!

Ingredients
  

  • 1.5 lb uncooked chicken breast (chopped into small pieces)
  • 4 Tbsp low-sodium soy sauce
  • 3 Tbsp rice vinegar (divided)
  • 2 Tbsp hoisin sauce
  • 1 tsp cornstarch
  • 12 cherry or grape tomatoes (halved)
  • 1 cucumber (small, diced)
  • 1 tsp sugar
  • 2 tsp canola oil
  • 2 scallions (fresh, diced)
  • 1 Tbsp ginger (fresh, minced)
  • 8 oz. can water chestnuts (drained, chopped)
  • 24 leaves lettuce (bibb or romaine)

Method
 

  1. In small bowl, whisk soy sauce, half (1.5 Tbsp) rice vinegar, hoisin sauce and cornstarch until smooth
  2. In a second small bowl, mix tomatoes, cucumber, sugar, and remaining (1.5 Tbsp) rice vinegar
  3. Heat oil in large non-stick pan or wok over medium-high temp
  4. Add scallions, ginger, and garlic to pan, stirring constantly for 30 sec.
  5. Add chicken, keep stirring until cooked (approx. 3-4 minutes)
  6. Add soy sauce mixture & water chestnuts to chicken in pan
  7. Cook & stir for about 1 minute until mixture thickens & transfer to bowl

Notes

Serve like soft tacos with about 2.5 Tbsp chicken mixture in each leaf of lettuce, and top with 1+ Tbsp tomato / cucumber mixture. Fold up slightly into a U-shape.
